The ABCs of Delicious Mead

Master Beekeeper Mark Carlson explains the ABCs -- Apiculture, Biology and Chemistry -- of brewing the world's first fermented beverage, mead! Carlson, who has chaired the honey competition for the Good Food Foundation since 2016, says his interest in mead grew under the tutelage of Amina Harris and her team at the UC Davis Honey and Pollination Center (part of the Robert Mondavi Institute). Among other goals, this talk will help you 1) apply comparative sensory analysis and other scientific tools to honey and mead, 2) choose among options for sanitizing your equipment and 3) gain insight into the fermentation process. Possible special guests include SFBA's Peter Wohlers and Michael Foti, both also experienced mead makers.
